Ovid White Experiment W5.8 2018 is a striking California white blend that captures everything exciting about Ovid’s experimental spirit. Made from eight grape varieties sourced across five different appellations, it offers both complexity and freshness, with Sauvignon Blanc and Viognier leading the charge. This is the kind of wine that feels distinctly Napa in quality, yet wonderfully unrepeatable in character.

Makuprofiili
In the glass, it shows a polished, luminous white-wine profile with a vibrant, inviting color. The nose is expressive and layered, opening with white pear, elderflower, apricot, jasmine, citrus, and a subtle almond note. On the palate, the wine is both broad and energetic, balancing generous fruit weight with lively freshness. Floral and stone-fruit notes carry through beautifully, while the texture is silky and composed. It is already highly appealing now, but it should also hold well over the next few years thanks to its concentration and structure.

Viininvalmistus
This wine comes from a patchwork of high-quality California sites, ranging from coastal mountain vineyards to rocky valley-floor plots, giving the blend a wide spectrum of ripeness, tension, and aromatic detail. Winemaker Austin Peterson used a deliberately mixed approach in the cellar: Sauvignon Blanc was pressed whole cluster, while other varieties were destemmed. The wine matured for eight months in a combination of neutral French oak and stainless steel, preserving freshness while adding subtle complexity.

Ruoka & tarjoilu
A wine like this shines with refined seafood dishes, roasted poultry, shellfish, creamy pastas, and vegetable-based cuisine with herbs or citrus. It also works well with soft cheeses and lightly spiced Asian dishes. Serve chilled, ideally around 10–12°C, and decanting is generally not necessary, though a short splash decant can help open it up if served young.
